White cheddar, that is, preferrably Irish, the kind that's made by craft cheese makers in smaller batches. 

 

I know that there are many many cheeses out there, and many are quite good.  Perhaps there are some that will scoff at the notion that my mind and taste turn to "just cheddar," but such is how those do turn. 

 

Add to the cheddar some slices of apple and crusty bread, maybe some olive oil, and that is a snack!

 

 

Though I won't scoff at Pop-Tarts.
